Add 1lb boneless skinless rooster thigh items (2-inch items) to a bowl with 1tbsp good dijon mustard, 1tbsp olive oil, the zest and juice of 1 lemon, 1tsp salt + cracked pepper, 1-2tsp garlic paste, 1tsp chopped recent rosemary. Combine, cowl and refrigerate in a single day or minimal 30 minutes. Skewer your rooster, grill outdoors (350F 4-6 minutes per aspect) or in a griddle pan over medium warmth for a similar period of time. Serve with lemon wedges and extra recent chopped rosemary.
Feta dip: Mix 4oz feta, 1/2 cup plain yogurt, 1tsp garlic paste, the zest & juice of a lemon and 2tbsp herbs (I used dill/oregano/chives) in a meals processor and pulse till easy. Pour right into a bowl, add a bit of excellent olive oil. Serve! .
