Spanakopita hen meatballs, lemon dill & chive sauce and some fridge favorites.
I really feel heartbroken at the moment, and questioning why unhealthy issues occur to good folks. Yesterday noticed me on the ER having to listen to that we’re to lose one thing so treasured, that we fought tremendous laborious for. 9 years. All I do know to do is preserve making stunning issues, perhaps as a distraction. A couple of plates bought smashed, I left them on the ground. Sat and requested why this was my destiny. I hate it, however the takeaway is that we’re all miracles. I received’t quit.
For the meatballs:
Mix 6 cloves minced garlic, 1/four cup chopped inexperienced onion, 1/four cup finely chopped contemporary parsley, 2tbsp freshly chopped chives, 2 cups chopped contemporary spinach (about 3oz), the zest of 1 lemon, half of teaspoon every salt and crimson pepper flakes, half of cup crumbled feta and 1 medium egg in a bowl. Combine, add 1lb floor lean hen mince and type into 1oz meatballs. Shallow fry in olive oil over medium warmth till golden, end in a 400F oven for 5-Eight minutes till cooked by means of. Serve along with your fave tzatziki and contemporary greens. My sauce was only a mixture of plain yogurt, the lemon juice from the lemon I zested, salt, herbs & garlic.
